A Daiquiri for Ernst Haeckel and the Dancing Jellyfish scarf

The Dancing Jellyfish scarf was inspired by Ernst Heackel’s documentation of thousands of new species of sea life during his time on the HMS Challenger expedition. As a sailor he would have experienced how rum and lime juice became a staple part of the diet to ward off scurvy and I imagine boredom.
Daiquiri
To Make this drink you will need:
- 75ml of white rum. (Must be Cuban)
- 25ml of lime juice. (Freshly squeezed)
- 2tsp sugar syrup.
Instructions:
Add all the above ingredients to a shaker, fill with ice and shake for 30 seconds or until your hands are freezing to the side of the shaker. Next step is to sugar rim the glass. To do this cover a small plate with a thin layer of sugar, run lime round the rim of a coupe or martini glass and dip into the sugar. Finally, double strain your drink into the glass using a tea strainer or sieve to stop any ice from getting through. Garnish with a lime wheel and get drinking.
