French 75 for the Delany Damask

I propose a toast to Mary Delany's amazing and influential life with a classic champagne cocktail called the 'French 75'.
To make this drink you will need:
- 50ml of dry gin. (I would recommend using an above average gin, I like to use Fishers)
- 25ml of lemon juice. (freshly squezzed)
- 10ml of sugar syrup. (you can by this in most supermarkets, or make your own my dissolving equal parts sugar and water in a pan)
- Roughly 100ml champagne. (not the good stuff, if you are buying premium champagne then its best drunk on its own!)
Instructions:
Place the gin, lemon juice and sugar syrup in a shaker, add ice and shake for around 10 seconds. Once shaken double strain into a champagne coupe or flute through a small sieve or tea strainer, this prevents ice shards from getting into the glass. Top this with champagne and garnish with lemon zest making sure to run the zest along the rim of the glass.
